Cucumber Rolls/ Spicy Thursday Link-Up

If you follow my blog, you’ve probably noticed that all my recipes are about taste and simplicity. And today is another recipe of super easy and refreshing appetizer that looks very fancy and you don’t have to spend hours in a kitchen. The combination of fresh cucumber, cream cheese, avocado and eggs was very refreshing and light. If you don’t like something from the list, you can easily create your own filling. 

I also want to ask you girls, we are planning a baby shower next week and I’m looking for interesting recipes. Any suggestions????

How to:

1. Slice the cucumber very very thinly

2. For the filling: add all you ingredients in a bowl, soften and stir (I used fork)

3. Add a spring of fresh dill and a tablespoon of filling on a cucumber stripe. Roll the cucumber around the filling. If your cucumber slices are very thin you don’t need to secure it with the toothpicks, if it’s thick and you see it doesn’t hold the shape, then secure it.

Your super refreshing, elegant and fancy appetizer is ready!!!

One-bite Salad in Parmesan Crisps/ Link Up Party

I’m very bad with following directions when it comes to trying a new recipe, I always want to add something, replace ingredients or use recipe as a base and then create something new from it 🙂 And it happened when I saw this Parmesan Crisps via Pinterest-awww Pinterest – so addicting, right? But I wanted to go further with these crisps and as the result I got one-bite salad in a crispy Parmesan vase. What do you think guys? The combination of salty cheese cup, fresh avocado and salmon was incredible and it’s definitely one of my favorites now.

How to:

1. Preheat oven to 350 degrees

2. Spread cheese on a baking sheet with parchment paper in 2,5-3 inches in diameter

3. Bake until they start turning lightly golden /about 5-6 minutes

4. Remove from oven, start creating a shape while crisps are still warm (they firm up very quickly)

5. Prepare ingredients for the salad -diced avocado, small pieces of cured salmon and dill

6. Fill up the crispy cheese cups with your salad and decorate with dill.

Ok, now you probably think that I’m obsessed with covering fruits and berries with chocolate and yogurt, but isn’t it cute to have these chocolate covered kiwi bites instead of just peeled kiwi? It took me less than 20min (don’t count time in a freezer) to make these kiwi pops and it was a great healthy alternative to my evening ice cream portion:)

Ну теперь вы точно решите что я просто помешана на том чтобы окунать ягоды и фрукты в шоколад и йогурт, но неужели вы со мной не согласитесь что эти милые фруктовые крожочки в шоколаде смотрятся на тарелке намного лучше чем просто очищенный киви. У меня ушло менее 20 мин (не считая времени на заморозку) чтобы приготовить киви в шоколаде и это отличная альтернатива моей вечерней порции мороженого:)

How to:

1. Peel kiwi fruits and slice them into 1 inch discs

2. Place a lollipop or popsicle stick (Lollipop sticks 100 count 6 inch)in each kiwi disc and freeze at least for an hour

3. Melt the chocolate and cool down to room temp.Here are some tips on How To Melt Chocolate. Dip your frozen kiwi discs into the chocolate (you can also decorate with white chocolate like I did)

4. Place on a tray or plate with wax paper and refreeze for 2min.

And now you can enjoy your delicious, healthy and crispy dessert!!!

1. Очистить киви и порезать дольками 2см

2. Вставить палочки в дольки киви и отправить в морозилку на час

3. Растопить шоколад и остудить до комнатной температуры. Обмакнуть фруктовые дольки в шоколад (можно сверху украсить белым шоколадом)

4. Положить на поднос с восковой бумагой и снова в морозилку на 2 мин

What can be more romantic than waking up your loved one with delicious and cute looking breakfast? These heart shaped pancakes are delicious, very easy to make and this breakfast will be a great start of the day. I used a clear water bottle filled with the pancakes mix and then created the shape I want. I’m sure next time my pancakes will look much better:) Do you have interesting Valentine’s day recipes???? Would love to hear your ideas!!!

Holiday Recipe: Peppermint Meringues

Hello my friends, I’m so excited that my family from Russia is coming to visit me(we plan to spend couple days in DC, then New York and Las Vegas-sounds awesome right?:)I will be taking some time off from blogging, but you’ll see guests post from my beautiful friends, so don’t miss it!

Hello! My name is Stephanie and I write a blog called Pretty and Delectable. Elena invited me to share a holiday recipe with you and I decided on peppermint meringues… a light and simple treat that is perfect for not only the holidays but any time of the year.

Peppermint Meringues (simplified version of this recipe)

3 large egg whites

3/4 cup sugar

1/2 tsp peppermint extract

red gel food coloring

Preheat oven to 175 degrees. Line two baking sheets with parchment paper or Silpat liners. Heat egg whites and sugar in a heat proof bowl over simmering water, stirring until sugar dissolves. Remove mixture from heat. Using an electric mixer with whisk attachment, mix on medium high speed until stiff peaks form. Mix in peppermint extract.

Draw lines of red food coloring inside of a pastry bag. Fill bag with egg white mixture and pipe mixture onto baking sheets using either a round (shown here) or star tip. Repeat this process with the remaining mixture.

Bake for 90-100 minutes until meringues are firm to the touch, making sure that the edges do not get browned. Cool completely before removing from baking sheets. Enjoy!
